What you'll need: (makes about 6 cups)


Brussels sprouts, quartered, 1 pound 

Fuji apples, diced with skin, 4 small

Onion, small yellow, diced 1 

Fully cooked ham, 1/2 pound, 1 thick slice, diced

Butter, 1 T

Apple cider, 1/4 cup

Extra virgin olive oil, cold-pressed preferred, 3 T 

Salt, 1 tsp 


To create:

Quarter the brussels sprouts like this: 

Roast for 10 minutes on 400 degrees. Set aside.

In a large skillet, place about 1 T butter. When butter starts to bubble, add diced onion and saute for about 3 minutes, The add dice ham, then brussels sprouts, then apples. Add cider, olive oil, and salt. Stir. That's it! Enjoy as a fiber-filled side or main dish!
