Roasting is one of my favorite ways of preparing vegetables. It changes it's texture and taste, while allowing for creativity. The timing needed for best results will be different with each vegetable. This may take a little of trial and error depending on the type of oven you have and how quickly it works!
All you need:
A sheet pan
Olive oil ( I fill a spray pump- better for environment than the aerosol version)
The herbs and spices you plan to use for that particular vegetable
To Create: (Let's use the example of asparagus and bell peppers as pictured above.)
Line sheet pan with aluminum foil. Chop asparagus and bell peppers in to bite size pieces (or not!). I cut these into small pieces in the above picture as I was adding this as ingredients to another dish. Lay veggies flat so that they do not overlap. Spray with olive oil. Sprinkle with granulated garlic, onion, and a pinch of salt. Roast at 400 degrees for 15-20 minutes. Yes, it's that simple!
Leslie's Dietitian Kitchen Tip: Experiment with herbs and flavorings that you like. For example, drizzle balsamic vinegar on asparagus before roasting. Yum!
